Amy Jean’s Kitchen: Florentine Scramble (Pioneer Woman: Dinnertime)

Scrambled eggs are one of my favorite sides for breakfast, but these

scrambled eggs are really next level. Honestly they could be a main

breakfast dish all on their own since they are filled with so many

great things and not only do they taste great, but they

are a nice healthy choice as well. Scroll on down for the recipe!

Recipe

Ingredients:

.

2 tbsps butter

½ onion, diced

1 cup cherry tomatoes, halved

1 cup fresh baby spinach

½ cup grated Swiss cheese

.

Scramble Mix:

.

6 large eggs

¼ cup half-and-half

Kosher salt and black pepper to taste

.

Steps:

.

1.) Mix together eggs, half-and-half, and salt and pepper until combined. 

.

2.) In a large skillet, melt the butter and sauté the onion until light

golden brown, 3-4 minutes. Add the tomatoes and spinach and

cook for 1 minute, until the spinach wilts slightly. 

.

3.) Pour in the egg mixture.

.

4.) Stir and cook the eggs until they’re almost completely set, then

add the Swiss cheese and stir until the cheese melts.
