Amy Jean’s Kitchen: Black Bean Burgers (Pioneer Woman: Dinnertime)

I used to give my friend Nicole crap for choosing to eat a black

bean burger over a real meat hamburger. I never thought I

would try one let alone like it, but man did I eat my words. These

burgers were actually really good and dare I say that I might

like them better than beef hamburgers.

Ingredients:

.

Two 14.5 oz cans seasoned black beans, drained

1 cup seasoned breadcrumbs

¼ cup grated white onion

1 large egg

½ tsp chili powder, more to taste

Kosher salt and black pepper to taste

Several dashes of hot sauce, such as

Cholula, plus more for serving

2 tbsp olive oil, for frying

2 tbsp butter, for frying, plus more fro grilling the buns

8 slices Swiss cheese (or any cheese you’d like)

4 kaiser rolls or good hamburger buns

Mayonnaise, for serving

Lettuce, red onion, sliced tomato, for serving

Steps:

.

1.) Place the beans in a medium bowl and mash them with a

fork until they are mostly broken up, but with

a few large pieces still visible.

.

2.) Pour in the breadcrumbs. Then add the grated onion, egg, chili

powder, and salt and pepper to taste. 

.

3.) Stir the mixture around until everything is combined, then

add the hot sauce and stir it in. Let the mixture sit for 5 minutes.

.

4.) Heat the olive oil and butter in a skillet over medium-low heat. Form

the bean mixture into 4 equal-size patties that are a little larger in

circumference than the burger buns.

5.) Cook the patties for 5 minutes on the first side, or until nicely

browned, then flip them to the other side. 

.

6.) Place 3 slices of cheese on each patty and cook for 5 minutes

more, or until the burgers are thoroughly heated through.

.

7.) Heat a separate skillet or griddle over medium heat and butter

the surface. Split the buns and grill them until golden brown on the surface.

.

8.) To serve, spread a mixture of mayonnaise and hot

sauce on both sides of the bun.
