Amy Jean’s Kitchen: Bruschetta (Eat Like a Gilmore)

I was definitely skeptical about this one because I am not a huge

fan of tomatoes. (I love ketchup, but real tomatoes? No thanks! lol)

However, I was actually quite surprised at how good this tasted.

10/10 would recommend! This is a great appetizer for any party!

Ingredients:

.

1 Baguette

4 roma tomatoes, large, diced

¼ cup chopped, fresh basil

5-6 garlic cloves, peeled and minced

1 tbsp balsamic vinegar

2 tbsp olive oil

½ tsp black pepper

½ tsp salt

1 tsp dried oregano

1 tbsp lemon juice, freshly squeezed

1 tsp lemon zest

Steps:

.

1.) Place oven rack in center position. Preheat oven

to 300 degrees F. Get out a cookie sheet.

.

2.) Using a serrated knife, slice the baguette into ½ inch slices.

Place each slice on its side, on the cookie sheet. 

.

3.) Place the cookie sheet in the oven for 15 minutes.

Bread should be toasted and crispy, but not browned. Remove

the pan from the oven and set aside to cool.

.

4.) In a medium bowl, combine tomatoes, basil, garlic, vinegar, and

olive oil. Toss ingredients together. 

.

5.) Add pepper, salt, oregano, lemon juice, and lemon zest.

Toss again, just enough to combine. 

.

6.) Use a spoon to top each baguette slice with a generous

portion of the tomato mixture. Serve.

Makes about 24 portions, depending on baguette.
