I had to pick my brother up from a dealership and was
put in charge of breakfast for us, so I figured these breakfast
sandwiches were just the ticket! They were easy to
make, filling, and very tasty. Better than a fast food breakfast
for sure! (I did substitute in bagels instead of english muffins
cause that was what I had on hand, but I don’t think it hurt the taste at all!)
Seriously, they were really good!
Nonstick cooking spray
¾ cup whole milk
½ tsp kosher salt
½ tsp freshly ground black pepper
½ tsp garlic powder
10 large eggs
2 cups small broccoli florets, coarsely chopped
1 small red bell pepper, finely chopped
½ medium red onion, finely chopped
6 slices deli style cheddar cheese
6 whole grain english muffins, split and toasted
1.) Preheat the oven to 375 degrees F. Coat a 9×13
inch baking dish with cooking spray.
2.) Whisk together the milk, salt, black pepper, garlic
powder, and eggs in a large bowl until smooth.
3.) Pour the eggs into the prepared baking dish. Sprinkle
the broccoli, bell pepper, and onion evenly over the eggs.
Bake until the eggs are set and golden brown on top. 20-25 minutes.
4.) Transfer the baking dish to a wire rack and cut the eggs
into 6 large squares. Place a slice of cheese on each egg
square, then sandwich the eggs with toasted English muffins. Serve hot.
