(Bacon Wrapped) Oven-Barbecued

Dude. First things first. This mac and cheese was

hands down some of the best homemade mac and

cheese I have ever made or tasted. It was absolutely

incredible! So creamy and cheesy and just perfect in

every way. My mouth is watering just thinking about it!

Pairing it with the BBQ chicken breast (which I opted to

wrap in bacon to take things up a notch) made

for an absolutely delicious meal.

BBQ Chicken:

Ingredients:

3 cups your favorite barbecue sauce

½ cup Peach Preserves

1 Garlic Clove

Olive Oil, for drizzling

12 Bone-In, Skin-On Chicken Thighs

Steps:

1.) Preheat the oven to 400 degrees F.

2.) Whip up the super-simple sauce: Pour the

barbecue sauce into a medium saucepan.

Add peach preserves and mince or grate in the garlic

3.) Stir in the mixture together, then heat it over

medium heat until piping hot. Remove it from the

heat and set it aside. Drizzle a large baking sheet

(or two) with olive oil and lay out the chicken

thighs, skin side down.

4.) Roast the thighs for 25 minutes to start, then

pull the pan from the oven and brush the

sauce all over the surface of the thighs.

5.) Use a spatula to flip the thighs over to the

other side, taking care not to tear the skin. Brush

the tops with more sauce and roast the

thighs for 7 to 8 minutes.

6.) Remove the pan from the oven, brush on

more sauce, and roast for 7 to 8 minutes more.

Finally, remove the pan from the oven, brush on

more sauce, and turn the heat up to 425 degrees F.

7.) Roast for 5 to 7 minutes, or until thighs are

cooked through and the sauce is starting to

brown and even blacked a bit around the edges.

8.) Remove them from the oven and let them sit

for at least 10 minutes before serving.

Quick Shells and Cheese:

Ingredients:

2 cups Whole Milk

1 tbsp Butter

2 cups grated Sharp Cheddar Cheese

8 ounces Velveeta, cut into cubes

1 tsp Black Pepper

½ tsp Kosher Salt

¼ Seasoned Salt

1 lb Small Pasta Shells, cooked al dente

Steps:

1.) Heat the milk and butter in a medium

pot over medium heat, until hot.

2.) Then add the cheeses and stir them around a bit.

3.) When the cheeses start to melt, stir in

the pepper, kosher salt, and seasoned salt.

Keep stirring until it’s nice and smooth!

4.) Finally, pour in the cooked shells and

stir until it’s all combined.

Apple Spice Muffins – Eat Like A Gilmore

I loved these muffins. They pretty much tasted like

apple pie muffins and the little bits of apple in them

helped to keep the muffins light and moist. The crumble

topping the muffins were supposed to have didn’t stay

“crumbly,” but that certainly didn’t hinder their

taste at all. I cannot wait to make these again!

Ingredients:

Cooking Spray or oil

½ cup Butter, softened

¾ cup Granulated Sugar

2 Eggs

⅓ cup milk

2 tsp Baking Powder

pinch Salt

1 tsp Ground Cinnamon

1 tsp Ground Allspice

1 ½ cup Flour

2 cups Peeled and Chopped Apples

Streusel Topping:

¾ cup Butter, softened

½ cup Light brown sugar

¼ cup Flour

1 ½ tsp Ground Cinnamon

Steps:

1.) Preheat oven to 375 degrees F. Coat jumbo

muffin tin with cooking spray or oil.

2.) In a bowl, mix together butter and sugar.

Whisk in eggs and milk until smooth.

3.) In a separate bowl, combine baking

powder, salt, cinnamon, allspice, and flour.

4.) Add dry ingredient mixture to wet

ingredient mixture. Fold in chopped apples.

5.) Pour batter into muffin cups until they are

almost full. For the streusel topping, mix all ingredients

until crumbly. Sprinkle over the top of each muffin. Bake

for 20 minutes at 375 degrees F.

6.) Remove from the oven and let cool, in the

pan, for 10 minutes. Move muffins from the

pan to wire racks and let cool. Serve.
